I can’t for the life of me remember where or how this recipe came to be but somewhere along the lines I ended up with this Ultimate Chocolate Chip Pecan Cookie recipe that I absolutely looooove. ❤
If you’re ready for some chocolate-y chippy pecan delightfulness, then keep on reading.
- 3/4 cup butter, softened
- 1/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 1 egg
- 2 cups flour
- 1 small box instant vanilla pudding mix
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup white chocolate chips
- 1 cup pecans
In a large bowl, mix the butter and both sugars for 1-2 minutes until creamy, light and fluffy.
Add the vanilla and egg until well mixed.
In another bowl whisk together flour, vanilla pudding mix, baking soda, and salt.
Gradually mix the flour mixture into the creamy butter and sugar mixture.
Stir in chocolate chips.
Cover and chill in the refrigerator for at least one hour.
Preheat oven to 350.
Lightly grease a baking sheet.
Roll about 3 tablespoons of cookie dough into a ball and place on prepared baking sheet. Gently press pecan pieces into the top of each ball; as many or as little as you’d like!
Bake for 9-12 minutes or until cookies are set but slightly underdone. Remove from oven but allow cookies to cool for about 10 minutes on the baking sheet before removing.
